Easy Okra / Egg Plant with Dried Prawns, Shallots, Garlic and Soy Sauce Mix |Creative Kitchen | Cooking @ Home


As a kid, I never liked Okra or Eggplant because of its slimy nature; no amount of convincing about its health benefits got me to eat them. During one of our family-outings, we ordered a really crunchy okra dish that changed my mind a little. Not all the way but just a little.

But just like other greens, it depends on how you want to cook it that will make the difference on how others enjoy it. 

I am no expert but I quickly learn from the Internet and YouTube. I think we learn a lot from mistakes. Just a couple of days ago, I burnt down a whole pot of red beans dessert that I wanted to enjoy. Still cleaning the pot two days down. Ah well...

OKRA/EGGPLANT with SALTED PRAWNS & DRIED SHALLOTS TOPPING

  • Really important to wash the okra down because this is a skin-in dish. We don't want impurities
  • Heat up water with salt
  • Once boiling, pop the okra into the pot and cook for about 2 to 3 mins
  • Prep cold water or ice water
  • Remove okra and place into cold water to stop the cooking/boiling
THE TOPPINGS
  • PREP : Soaked and dried salted prawns, deep fried shallots, fried garlic
  • Add 1 to 2 TBs oil - fry shallots till brown - remove
  • Fry dried prawns till fragrant - remove
  • Fry garlic till fragrant - remove
  • Point is you want these to be toppings and not stewed or soft.
THE SAUCE
  • Soy sauce, fish sauce, sesame oil, oyster sauce and maybe some sugar, and 50-50 water
  • In the same pan, heat everything up till boiling point
ASSEMBLE
  • Okra is cooled down and plated
  • Pour sauce over the okra
  • Top it with toppings

Sometimes, we don't want to cook at home. I know it is invigorating, exciting, and fun but....maybe Mamak is fine?

During a rainy morning when we collectively woke up a little later, we decided that we can send SON1 to work in Puchong and we ended up eating some really delicious ROTI banana (we don't get that here at our regular mamak because they don't have bananas/pisang ALWAYS.

Maid Side-Kick

I was kind of a little sad when I read the news about this - there will be no live-in Indonesian maids in Malaysia anymore . There are pros and cons to having a live-in maid, as with everything else, but for us, we enjoyed more pros than cons. Demanding a Balanced Lifestyle

We live in a world choked with demands….demand for more money, better lifestyle, more holidays, smarter kids, bigger house, posher cars….etc. People walk around with spiritually unimportant goals in their minds driven by the need to succeed and be better than others around them. Hong Kong. South Korea. Japan. Most Asian countries suffer from this ill-fate which have caused a horrific rise in the number of suicide rates in the said countries.
