Creative Kitchen : Sometimes, Most of the Time, is the Best ~ Stew Cabbage & Carrots, Pan-Fried Chicken Breasts
Son 1 just started working and after a hard day's work, I want to provide him (and them, eventually) with simple home-cooked food. I tried to take pictures of all the food we've made so far but most of the time, I forget. 😖
- Marinaded butterfly-cut chicken breasts with oil, garlic powder, onion powder, cayenne, paprika, cumin, light soy sauce, oyster sauce, pepper, and a touch of vinegar
- Marinade for 2 hours
- Bring to room temperature
- Pan-fry each side for 2 to 3 mins each side
- Air-fry for 15 mins
- Cook sauce with remaining chicken juice in the pan with broth, soy sauce, oyster sauce and chili/tomato sauce and a little bit of sugar
- Adjust to taste; serve as topping/baste/sauce
- ENJOY
Stewed Cabbage and Carrots
This is something the boys have always loved. I used to have leftovers saved up for me but today, they kind of sent-it and did everything in, piling vegetables onto their plates. To them, as long as it's not bok choy. LOL. And this is a very simple dish to make, as well.
- Mince 4 to 5 cloves of medium-sized garlic
- Thinly cut cabbage and julienne the carrots
- Heat oil and saute garlic till fragrant
- Add in carrots and cook for about 3 mins till soft
- Add a cabbage and stir
- Add salt to help the vegetables sweat
- Cover and cook for 2 mins or till softer
- Season with salt, pepper, light soy sauce, oyster sauce, fish sauce (optional), chicken granules, and add water; toss the vegetables around, taste test and adjust
- That's it: ENJOY
Food Found All Around
Son 2 and I found a quaint little cafe nearby where the noodles were kinda exceptional so, I took a couple of pictures and we plan to go back there for more with Son 1. Later, when he's has more time on his hands. Go check out their IG.
I don't know the name for this but the sauce was on the sweet side served with basic vegetables and slices of chicken. DELISH and savory.
Son 2 had this and is a bit of a Twilight Zone thing for us. We saw the recipe and description but on hindsight, we should have taken a closer look. But we did not. Another strange discovery that made us curious. The dried shallots was the highlight for us.
This is like a local Cham drink but with potentially Gula Melaka and Pandan and that's just my guess. It wasn't too sweet despite the condensed milk; it has a nice balance.
Anyway, I'll try to remember to take more pictures of the food we make at home and found around the neighborhood. Toodles.
