Recipe: One-Pot Herbed Sweet Sour Chicken Stew with Mushrooms

It's been some time since I've posted anything on my Cooking Blog. For one, I've been lazy. Don't get me wrong but taking pictures and writing down the (sometimes) random recipes can be time consuming. I've been either running around chasing snake tails or simply swamped with everything that is life.

Out of the blue, while cooking, I found my phone next to me, playing a Podcast. After snapping a picture of it, I stood there wondering if I still have the Cookpad app on my phone. Viola! I did!

There has been some upgrades on the Cookpad app so, I got curious.

Guess where that got me. Yup, a new post of a shitty-looking picture of dinner but with a legit easy recipe.

Seriously, this doesn't get any easier. If you have all the ingredients with you, it's a dump-and-done thing.


Lord, I know I need to do something about taking more presentable pictures of the food but I just...don't...have...the...time...or energy.

It's a side-hobby so, this is going to have to a pass from me.

One-Pot Herbed Sweet Sour Chicken Stew with Mushrooms

Ingredients

3 servings
  1. 700 g chicken
  2. (Section A)
  3. 3 tbsp soy sauce
  4. 3 tbsp honey
  5. 1 tbsp apple cider vinegar
  6. 1 tsp seasoning (chicken/mushroom)
  7. 1 tsp salt
  8. 2.5 tbsp tomato paste
  9. 1 tbsp Sriracha sauce
  10. 1 tbsp oyster sauce
  11. Mixed Italian herbs
  12. 1 tbsp garlic powder
  13. 1 tsp dried parsley flakes
  14. 1 tsp dried pepper flakes
  15. 1 tsp Worcestershire sauce
  16. (Section B)
  17. 1 can button mushrooms (chopped)
  18. 1 onion (chopped)
  19. (Section C)
  20. 1 tbsp corn starch
  21. 1.5 tbsp water

Steps

  1. Add all ingredients into a mixing bowl. Taste test and adjust 
  2. Mix into above sauces in section A into chicken. Let marina (or not) depending on how much time you have.
     
     
  3. Place into pot with a small cup of water.
     
     
  4. Top it with chopped button mushrooms and onion
     
     
  5. Close lid and cook for about 20 mins in pressure cooker or about 5 hours in a slow cooker
     
     
  6. Add in slurry of water and 1 tbsp cornstarch, mix well unless sauce thickens

Stargazer - Stretch Those Sides

I have been doing this pose, part of Cosmic Dance (a type of yoga, I am assuming), called Stargazer pose without knowing it is called Stargazer's pose a lot in the past. Maid Side-Kick

I was kind of a little sad when I read the news about this - there will be no live-in Indonesian maids in Malaysia anymore . There are pros and cons to having a live-in maid, as with everything else, but for us, we enjoyed more pros than cons. Back then, when my kids were little, we brought in a family of maids to help with...well, just about everything, and we were like two families merged into one. A Liberating Activity - Guess What Mine Is....

When asked what’s my one single favorite thing to do in the world, I would usually name a whole list of things that I love to do when my work is not screaming at me. Something that takes my mind COMPLETELY off of everyday tasks and relaxes me. Take a guess what it is….
