I remember my younger days when my mom was sometimes too busy to make dinner when she would make a pot of soup and cook some rice and serve us with maybe some nuggets, fried chicken or some fish balls. That would be it.
Maybe because it is reminiscent of my childhood days when dinner was always ready on the table when the time comes that soups of any kind, in particular, this ABC soup, is such a comfort for me. I don't know about my siblings or anyone else but I have a very strong liking for this soup because...I mean, what's NOT to like? It's got carrots, potatoes and tomatoes. You can't possibly go wrong with this!
Anyway, with some chicken breasts or chicken bones (carcass if you want to save money and don't like the presence of too much oil in the soup), you're ready to go in an hour or so.
In fact, you can throw everything into the slow cooker and set it for maybe 2 hours (depending on your slow cooker), go to work and you come back to a hearty, tangy and appetizing soup for dinner! For me, I love the tanginess of tomatoes so it's a few extra ones in there for me.
But for the record, I cheat. If you're like me, add a dash of tomato sauce in there. Yes, the conventional tomato sauce that you eat with french fries and toast. Just a dash and it makes a world of difference!
In the soup:-
- chicken carcass and half a chicken breast
- Knorr ikan bilis (dried anchovies) cube
- 3 carrots
- 3 potatoes
- 4 large tomatoes
- 1 large onion
- 5 cloves of unpeeled and whole garlic
- a few small dried scallops (just for that little bit of seafood-y taste)
- salt
- pepper
- soy sauce
- chicken granules
- tomato sauce
- a dash of oyster sauce
- needless to say....WATER lah! LOL
Anyway, I've been sick because I am on medication for gastric caused by the presence of H.Pylori bacteria and you know what? The drug sucks almost just as bad as the gastric that I have been suffering from. But it's been a few months now that I have been suffering from the recurring bouts of gastric and it's time I kick this bacteria in the butt for good so, stick to the meds I shall.
It's only been...what, Day 4? The treatment is for like 14 days? T.T Loooooooooooonnnnggggg way to go but if I have to do this, I have to do this.
