This was so simple I regretted not knowing it before. Basically, it's the process of cooking down the eggplants and then covering it with your favorite sauces.
People like me like a balance of saltiness and sweetness.. and a bit of spice. In this, there was a bit of a crunch in the raw garlic.
Blanch or steam the eggplant and then toss in the sauce and you're good to go!
